overheating problem

My car keeps boiling my coolant water. I have filled it 3 times in two days. FIrst it blew the upper radiator hose off the filler neck. Then it blew the top off the over flow tank. Somewhere around the same time it blew the front turbo coolant line open. When I'm having my over heating problem, the radiator fans have not been coming on. After over heating today, I refilled the system, burped it, and everything seemed good, and I noticed the fan was running. After trying to drive it home, it was perfect. I thought maybe I just didn't fille it up all the way last time. The heater was finally blowing hot air, so I thought I'd give it another try to go back to work. At almost exactly the SAME spot on the highway I over heated before, the temp needle jumped up again. Then right before hitting the "H", it spilled back down to normal operating temperature. THis only last about a minute and it was overheating again. Heater was blowing cold air again, and at idle, the radiator fans are not running. I checked the fan fuse, and it looked good. I pulled both of the relays(?) for the hi and low fan and plugged them back in. I pushed on the fan harnesses for both fans to make sure they were plugged in. I ended up stopping at a Discount Auto, and a guy there said if the fans aren't running, it can over heat. With the just the fans not running, can the temperature jump that fast, even when coasting at 80 on the highway? Would there be something else going bad, like a sensor that actuates the fans? I was about to buy a new water pump the other day thing that was the problem, but after talking to a few people, I guess a broken water pump is usually pretty obvious. If anyone has any ideas, PLEASE let me know. Oh yeah, the first place I stopped at to ask for advise, the guy had some handheld thermometer with a laser on it. I guess it measures the infrared energy coming from the different parts, but he said the thermostat was running at the right temperature, so it was probably opening when it was supposed to , around 195 degrees.

I found that out last night

I kept the AC on with the heat still turned up so I can tell when it's starting to over heat. My car will run fine for 15-20 minutes after I put fresh coolant in, except at a stop, the heat gets cold, and back to warm once I start moving. The system is already over pressurized as soon as I start the cold car. As soon as I started it last night, I heard a loud buzzing that sounded like a fuel pump, but I got out of the car and popped the hood, and it was coming from the radiator cap. Once the overheating first starts, it lasts about 30 seconds, and then drops back to normal temps for about a minute, then over heats again. SOmething is working intermitantly. I bought a new thermostat and fill cap last night, and I'll change those out later today. The fans work fine since they come on with the AC, but for some reason they won't come on when the car is overheating. I don't think the fans should matter that much when I'm on the highway though. IF it's overheating then, I have something else wrong besides just the fans, especially since I had them both running all the way homne last night, which took me 2 hours to do a half hour drive.
