ok, your crazy taking the head unit out

I take the side panel out on the pass side, then pull back the carpet that goes over the last of the tunnel before you hit firewall, it's under there, not sure I have pictures...will look now.

the one your working on BEHIND the cat is just an exhaust TEMP sensor, the exhaust temp sensor is connected under the passenger seat (you need to remove the seat to properly get a look at it. )

if the 02 has been cut that's REALLY not good.

other can comment further, I have to run to bunnings.

I believe so yes, you MAY need to dig around in there to find it, or the other chopped up bit :|

you probably find the 02 plug is attached to the metal work somewhere (and the other lead comes up and mates with it) keep in mind mitsu don't leave any plugs lying around that can rattle.
