unhook the battery while cars running, if the alt is good it should run for a while.
Never unhook the battery intentionally while the car is running.

The chances of creating a voltage surge and damaging some electronic component are large. The battery acts like a capacitor and keeps the voltage stable. You are correct the car should keep running but proper trouble shooting is the way to go here.

It sounds like the alternator is intermittently failing to output correctly. Get a voltmeter and put it on the output terminal of the alternator. It should be between 13.8 and 14.7 preferably close to 14.4. Check at the battery and it should be same or slightly lower.

If you are seeing intermittent voltage loss from the stock voltmeter most likely alternator not charging. You could if you had your meter stop and check the alternator at that point.
