It's crazy how you describe your problem is EXACTLY what my car does. Word for word.
Maybe I shouldn't waste my time/money with a new IAC.

You can try it and see if it cures the problem, and if it doesn't just take it back. If you find a solution, or anyone knows or has a suggestion of what to do, please let me know because this is boggling me as to what the issue could be
Just one more thought. I noticed when it does the low rev's start, like it'll try and idle around 400/500 and almost dies until you start driving. The thing I wondered was when it's around these low numbers, if I push the throttle, the response doesn't seem to be good at all, until you start driving. Could this hint towards a bad throttle position sensor or something along those lines? Thanks.
Next time you fire it up and its idling very low with low throttle response, floor it to 5k. When I did this, it seems to have cleared up whatever has holding it back and let it rev freely.

This very well could be the case. I'll have to check the wiring this weekend. I'll report and let everyone know. Did yours occasionally idle correctly vary rarely for short moments like Jon and Mine's problem?
I had a very bad throttle searching going on not to long ago when it first started to be really cold in the mornings. Turned out I was very low on coolant for some reason. Other than I am fine with my coolant now(not running away), my idle issue disappeared. So, I will say check your coolant level, and also check your ecu coolant sensor.
