Im just going to take a guess here but I would figure that it would probably mean that the freon level is low or something along those lines. If it doesnt blow as cold as it use to than that is most likely the case

it means that you're pump is low on either oil or freon, just take it to you're local shop and have them inspect the system for leaks and recharge it.

The red dot means a few different things. It just states an error in the AC system.
Either low on Freon, the RPM vs Speed sensor doesn't match which would be a belt issue. Clutch engagement failed. etc. etc.
First thing would be to check the freon level, next would be to check the belt and make sure it is tight. Third is the speed sensor on the compressor unit, then last it is the compressor unit that has failed.
Good luck!

Side note: Redhot, no it is not plug and play. It requires a lot of work and all the components. Display unit/Climate Computer/Servos/sensors/wiring.

Has anyone done this conversion using parts from a donor car? I've got one, and know all the components work.

Red dot is just a generic 'error'. 1st thing you should do is pull a code from AC system (if there is one).
