Reading what you write is giving me headaches. If you didn't drain the fluid out of the tranny before you started all this, then yes fluid should come out when you remove the axles.

oh jesus man.... you are trying to drop the transmission to fix the clutch? It sounds like you dont really know what you are doing and its going to be a pain in your ass to do. I have a pretty high mechanical knowledge and I just did the clutch in my stealth and it was a BITCH. I just hope you have a transmission jack and some better luck if your breaking stuff. follow the stealth316.com instructions.
