Just saw this today after i turned the car off. I have an aftermarket fuel pressure gauge installed in the fuel supply line. Pressure while the car is on is around 39 to 40 PSI. After i turn the car off, pressure starts to build up. I dont remember how much it increased but i could guess to about 50 or so PSI. It doesnt happen so quickly, it takes long for it to reach that amount of PSI. After that it slowly decreases until it get to 0 PSI (takes hours). Is this normal?

pretty sure its normal. If everything is working right then pressure should remain in the line for a while so that the car fires up the next time you crank it up.
Pressure likely rises a little after the car is shut off because the FPR no longer has the engine pulling vacuum at idle, so it probably makes 45-50psi right as you shut down, and then the pressure gauge reflects that after a while.
