I must agree that the GTR posting quicker times then those high end super cars is impressive but I would think the ring is the absolute worst place to compare different car's performances. Since its so long doesnt driver abilities and the sheer luck that you dont screw up once in the entire 7min lap kind of mess up the times? Like if one driver can corner .1 seconds faster then another driver the course is so long that becomes a big deal. And not to mention last time I looked up lap times for the ring they are missing a bunch of very high end cars.
You bring up good points, but then again consider these:
That course is used as a de facto "benchmark" for all kinds of high end cars. The drivers that are hired to run those lap times know it like the back of their hand, and it's not like they just do one lap per car either. Also the longer the track is the larger the sample is to compare. So, comparing the fastest lap times of various cars at the 'Ring is a very fair/balanced way to compare the performance in my opinion. How else could it be done? I am sure there are lap times at other (shorter) tracks that are very impressive too.

A dyno can nearly spit out any number its operator wants to see. The 120ish trap speeds show its real power. From a roll on, a mildly(i mean very very mildly) tuned Vette would pull one pretty hard.

How are you comparing a stock base that weighs 3900lbs Skyline to a tuned C6 z06 that weighs ~3300lbs? Roll Racing is not a concern to the Nissan and their engineers! That car has proved it self on the drag strip and on the track.
It's an amazing car but I would never believe that it would be the fastest road car ever...extraspecially with McLaren F1s still running around.
