Your name would be Hulk if you could turn the engine over by hand and smash the pistons into the valves with so much strenght you didn't even notice it. Trust me if the piston came in any kind of contact with the valves you would know it.
If you wanted to make sure 100% you could do a leak down test with the cams pulled off (not to hard to pull the cams). You wouldent even need the fancy leakdown tester if you didn't want to. All you would need is the peice to thread into the spark plug hole and hook it up to an air compressor. If you hear anykind of air in the exaust or intake somethings not right.
Do you have a shop manual? If not you should get one as there are alot of details like torque specs you will need to know.
Maybe try search stealth316, they must have a walk through on there.
