I am assuming people use it because its so readily available but I do not know. I know I have seen many different setups and allmost all use bakingsoda, water, and run it off a car battery or other 12volt source and they have completely different prodoction results. between the nomber of negative/ positive plates, and size. with the same electrolyte. I do not know why
