A EGT measures the temperature in the exhaust. A high EGT ~900C+ can indicate a lean cylinder condition and the possible danger of melting components. However, with a N2O "Dry Shot" you can easily lean out a cylinder faster than the EGT gauge can indicate the temperature increase and you will be SOL!
