If you are racing at the track you just need to load your altered 'racegas map' and be done with it.
I'd set up a switch to trigger the nitrous mode of the AEM, so that any time you've got the switch closed then the AEM things you are spraying nitrous. Then you get a nitrous fuel offset map and nitrous timing offset map that you can play with to dial in more advance and less fuel while running race fuel or whatever you feel is appropriate for your car.

I've never seen two completely seperate timing/fuel maps in the AEM that you can toggle between. Most likely TorqueFreaks was planning on doing what I've described here, or similar.
